Chickpea Patties

These can either be made small and served as a starter, or larger patties can be served as a main dish.
  1. Place potatoes in a pan, cover with boiling water, add a pinch of salt and cook until just soft.
  2. Place half the oil in a frying pan, add onion and garlic and fry until translucent.
  3. Drain the potatoes, add the onion and mash roughly till almost smooth.
  4. Add the remaining ingredients and mix well.
  5. Form into small patties, using clean hands to shape them.
  6. Return to the frying pan, add remaining oil and cook gently till crisp and golden on outside and warmed through. Turn half way through cooking so both sides are brown.
  7. Serve with mango chutney or spicy salsa.

Chef's tip

Substitute the chickpeas for left over chicken, chopped cooked bacon or cooked smoked fish for a variety of different tasty meal ideas.

Ingredients

600g potatoes, peeled and roughly cut into small pieces

2 tbsp vegetable oil

1 small red onion, finely chopped

1 clove garlic crushed

100g TOTAL Greek Yoghurt

400g tin of chickpeas, drained

Bunch of fresh coriander, roughly chopped

Salt and fresh ground black pepper
